About the Role
Reporting to the Head Chef and Executive Chef, the Sous Chef is responsible for leading a team of chefs to produce high-quality food in accordance with The Fresh Collective's standardised recipes and production systems. You'll play a key role in coordinating daily production, maintaining exceptional quality standards, supervising kitchen operations, and ensuring timely execution of orders for premium events and venues.
Key responsibilities include:
- Coordinate daily production planning and oversee mise en place for upcoming events
- Supervise the preparation, cooking, packing and quality control of all kitchen production
- Ensure the accurate, consistent preparation, presentation and portioning of dishes in accordance with standardised recipes
- Lead, mentor and support junior kitchen staff while promoting safe and efficient work practices
- Maintain the highest standards of food safety, hygiene and workplace compliance
- Communicate effectively with the Head Chef and Executive Chef to ensure smooth daily operations and successful event delivery
Essential Fresh Sous Chef Requirements
- Certificate III in Commercial Cookery
- 4+ years' experience in a 5-star hotel, large-scale restaurant, production kitchen or catering company
- Previous experience in a high-volume production or events kitchen
- Passion for producing exceptional quality food
- Strong production planning, organisation and time management skills
- Ability to effectively lead, motivate and develop a team of chefs
- Excellent attention to detail and commitment to consistency
- Thorough understanding of food safety and kitchen compliance
- Ability to follow and uphold standardised recipes and production systems
